Guest Post - Spaghetti Bolognese Recipe

I don't now about you, but there really is nothing that beats a homemade bolognese when you are seeking some form of comfort food. The simple and easy to follow bolognese recipe will soon become a favourite that you can cook over and over again. It's a favourite in our household. This thick, rich sauce has become the staple for our Italian inspired recipe and what makes this even better is that it is low in calories and slimming world friendly -  a healthier shortcut to real Italian taste.





You will need:

Low calorie spray
1 large white onion, chopped
300g pork mince (5% fat or less)
2 carrots, peeled and chopped
1 courgette, diced
100g mushrooms, chopped finely
1 can of chopped tomatoes
2 tbsp Italian seasoning 
1 beef stock cube
Salt and freshly ground pepper
Dried spaghetti, measured for each person. 


1. First, spray a large frying pan with low calorie cooking spray and place over a medium heat. Add the onions and carrots, season with salt and pepper. 

2 Next add the pork mince and cook for a few minutes, then add the courgette and mushroom and cook for a further few minutes or until the pork is cooked through. Drain off any excess fat then add the chopped tomatoes and Italian herbs.

3. Boil the kettle and make up your beef stock, around 180ml and add to the frying pan and bring to boil. Cover, reduce the heat to low and simmer for 30 minutes or until the sauce thickens.

4. Meanwhile, cook the spaghetti according to the packet instructions. Between 50g to 75g of pasta per person. Drain. Divide the spaghetti and bolognese sauce between each person and serve with a salad. If you are looking for an alternative to pasta, you could try seaweed pasta, courgetti spaghetti or pair with a bunch of speed vegetables.
