20th November Friday Favourites!

I often change what I eat and what I cook according to my mood, the weather, seasonal fruit and vegetables, and what is on offer at the shops I go to! money of course also has a big impact on what we all cook doesn’t it, no one wants to spend more than they have to on food when you can save it for a holiday but equally eating on a budget some days doesn’t always mean eating bland foods either! So, I thought hey why not share these things with everyone who reads my blog, so every Friday I will share my favourites of that week, it may help give others ideas, it may it may inspire you to try something different, or it may just make you wonder why on earth I like such a random selection of foods who knows!

Favourite budget meal this week
Carrot and ginger soup
2 sticks of celery sliced finely
1 large onion diced
600g carrots roughly chopped
2 cloves of garlic crushed
2cm root ginger finely grated
1 litre hot vegetable stock 
First fry the onion, garlic, ginger and celery in frylight for 5-6 minutes on a medium heat. Add the carrots and stock then bring to the boil. Turn heat down and simmer for 20-25 minutes, cool then blend. Warm through to serve. Can be frozen.
I love this soup as it is cheap to make and this recipe serves 4 for around £1-1.50 depending where you shop!
Favourite recipe of the week
Middle Eastern Casserole
I adapted another recipe slightly so here’s what I did.
2 courgettes cut into approx 1cm cubes
1 red or yellow pepper deserved and roughly chopped into bite size pieces
2 red onions peeled and quartered 
200g chick peas drained and rinsed
400g can of chopped tomatoes 
2cm root ginger finely grated
2 carrots roughly chopped
2tsp ground cumin
1tsp garlic salt
1/2 tsp paprika
400ml vegetable stock
Put all ingredients in a pan and bring to the boil, then pour into a casserole dish and cook at 200c for 25 minutes. Simple!
Favourite vegetable of the week
My favourite vegetable this week would have to be carrots! I love them because they are so versitile! This week I’ve had them raw on salad, blended into soup, steamed on Sunday roast, in my middle eastern casserole, and roasted as chips!! 
Favourite fruit of the week
By far my favourite fruit this week is honeydew melon! I love melon to snack on and just chop it up and pop it in the fridge then it’s there for an easy snack! I never drink enough so I find melon helps me too as there’s such a high water content in it! Not as easy to just pick up and eat as say a banana but only takes 5 minutes to prepare and I feel very worth it!
Favourite child friendly/family meal of the week
Ben loves making stir fry and whenever we make it we call it a Ben special stir fry! I guess with lots of children it wouldn’t be so easy but Ben has his own pan and I give him some of each of the vegetables he is having in it he just decides how big to chop them, this way he has the vegetables I want him to have but feels in control! Then using scissors he cuts up a gammon steak into the shapes he wants then fry it all with any flavours they like and hey presto a quick healthy meal they “designed” so much more likely to enjoy eating! Ben loves Chinese 5 spice in his and served with boiled plain noodles!
Favourite herb/spice of the week
This week I have used a lot of cumin as always and I love the smell of it! It’s used in a lot of chillies, curries etc and was the main ingredient in my middle eastern casserole giving it a warm gently spiced flavour! Many of my favourite meals have cumin in so I would be lost without it!
Favourite bargain buy of the week
This week I’ve found frylight in a few shops cheaper than the main supermarkets. It is in B&M bargains for £1.29, home bargains for £1.49 and Poundstretcher for £1.39 so all cheaper than the £2 ish it is generally in the supermarkets! 
I love spotting bargains too of items reduced as close to best before date or because the shop are stopping stocking an item. This week have found a bag of frozen quorn fillets for 52p (a local co-op stopping stocking them). I also found some grated mozzarella 100g bags for 16p as they had reached their best before date which I will pop in the freezer and use when needed! My other favourite this week was a couple of bags of carrots at their best before date for 10p which I used to make the carrot and ginger soup!
