I love mushroom soup but most of the commercially available ones are less healthy than homemade so I had a go at making my own and as I like it I thought I would share it.
800g mushrooms (cleaned and trimmed)
2 small red onions (roughly chopped)
1 Mushroom or vegetable stock pot (or two stock cubes)
1.5 pints boiling water.
1tbsp tried Tarragon
1. Dissolve the stock pot or stock cubes in the boiling water and place in a large saucepan
2. Add the mushrooms, onions and tarragon.
3. Boil for approximately 15 minutes until soft.
4. Allow to cool then blend
5. Reheat and serve.
NB. This recipe makes approximately 2 litres of soup. more stock or hot water can be added if you prefer it to be runnier as this makes quite a thick soup.
