The sausage casserole I make is really easy and always a big hit so I thought I would share the recipe I follow for you to try too.
6 Sausages (I use Quorn low fat sausages for me and I use Slimming World Sausages for Stuart and Ben – I cook them separately in different slow cookers!)
3 peppers deseeded and cut into bite size chunks
2 cartons of passata
1 can baked beans
500g mushrooms quartered
2 large red onions
1 large courgette cut into cubes
4 tsp Ground Cumin
2 tsp Paprika
1 tsp Garlic salt
I put it on low for 4 hours, sausages went in frozen and all other ingredients raw. It usually serves 4 but increasing the sausages helps if you want 4 big portions. It keeps well in the fridge for a few days and microwaves easily to reheat. I don’t usually serve it with anything though if you wanted meal to go further could serve with potatoes/rice or anything you fancy!
