Onion Gravy

Gravy is such a staple on a roast dinner isn’t it but it can also be quite high in syns or calories so I set about making one I would enjoy that would not only be syn free but also packed full of vegetables too. It isn’t quite like a shop bought one but I love it and so do Stuart and Ben so I thought I should share the recipe!

Makes approximately 1-1.5 litres depending on how thick you like it
Takes 30 minutes (quite easy though so can easily be done whilst doing other things)

1kg onions peeled and sliced
5 cloves of garlic, sliced
Vegetable stock – about 400 ml I use but depends how thick you want it
Low calorie cooking spray
Spray a large frying pan with the low calorie cooking spray and place over medium heat, gently fry the onions and garlic for around 20-25 minutes until browning well, ideally so they look like the kind of well cooked onions you would have on a burger or hot dog!
Blend the onions and with 100ml of the stock and then add more stock until you reach your desired consistency.
This freezes well so can be made in advance and reheated in a microwave or pan.
