Serves 4 – Syn free on Slimming World if using syn free sausages
6-8 Sausages (I use Quorn low fat sausages for me and I use Slimming World Sausages for Stuart and Ben – I cook them separately in different slow cookers or cook the rest of the mixture as per recipe and add cook the sausages separately to add in!)
3 peppers deseeded and cut into bite size chunks
2 cartons of passata or 400g cans of chopped tomatoes
1 can baked beans
500g mushrooms quartered
2 large red onions (peeled and quartered)
1 large courgette cut into cubes
4 tsp Ground Cumin
2 tsp Paprika
1 tsp Garlic salt
I put it on low for 4-6 hours but if you don’t mind the vegetables being a bit softer then longer is fine too. It usually serves 4 but increasing the sausages helps if you want 4 big portions. It keeps well in the fridge for a few days and microwaves easily to reheat. I don’t usually serve it with anything though if you wanted meal to go further could serve with potatoes/rice or anything you fancy!
