Barbecue chicken for a healthy Lunch

If you are eating healthily then you may have difficulty in finding lunches for work. This barbecue chicken is just one of many amazing healthy lunch ideas I have found so do check out my other recipes for more ideas.

If you take lunch then you are so much less likely to buy food which inevitably will be less healthy. Taking a variety of food throughout the week to work keeps your lunchtimes interesting and stops you getting bored.

Even if, like me, you work alone at home it can make such a difference having your food already prepared for you. Why not give it a go and make sure you build a variety of lunches into your weekly meal plan.

Why you need vegetables to lose weight

Everyone knows vegetables are good for you, don’t they? They are healthy and filling for very few calories!

The best vegetables are those with low-calorie density. Basically, we are talking about healthier vegetables – potatoes don’t count but butternut squash is much healthier for example!

This means if you eat 100g of spinach, for example, it is just 23 calories and obviously, 100g of anything would fill you up significantly. On the other hand, 100g of crisps, which would be just as filling, is around 536 calories!

Slow Cooker Tips

Before you start to think about recipes with your slow cooker here are a few tips which may help. If you find your meal is a bit watery take the lid off the slow cooker and turn it up high for half an hour this can help evaporate some of the water.

Using Slow cooker liners can save washing up if you are making something that often sticks. Be careful when spooning the food out that you don’t tear the bag or it can make a mess!

Remember that nothing evaporates so you may need less liquid than in other recipes eg on the hob.

Get the best size slow cooker for your family there are lots of great ones on Amazon with many under £30 for a good brand and good size!

Using frozen chicken

Description

This easy slow cooker barbecue chicken recipe is perfect for all the family and can easily be made with the vegetables your family enjoy. Perfect served with boiled rice or chips.


Ingredients

Scale

4 Chicken breasts (these can be cut into chunks before cooking or left whole to pull when cooked)

3 Peppers cut into bits size chunks

300g Mushrooms halved or quartered depending on size

3 red onions, peeled and quartered

150ml Worcestershire Sauce

2 tsp Mustard Powder

4 cloves of Garlic crushed

6 tbsp. Granulated sweetener

2 x 400g cans of chopped tomatoes

90ml Balsamic Vinegar


Instructions

Place all ingredients into a slow cooker and cook on low for 6-8 hours. Allow longer if the chicken is frozen and ensure it is cooked thoroughly before serving. Use a slotted spoon if required to remove the meat and vegetables from the sauce.

This is one of those meals that really can be prepared in just a few minutes. I have made it before by putting all except the chicken into the slow cooker the night before then in the morning it is quick to get the chicken out of the fridge and turn the slow cooker on. This smells amazing too when you walk into the house so is a perfect slow cooker recipe! It is great served with rice (you could buy frozen and microwave if you don’t want to wait!), a jacket potato, or maybe just some homemade wedges or chips!

This is great for children to join in with helping to make as it is really easy if they can measure and as it is going into a cold slow cooker they are safe! Ben loves making it with me!
