Carrot cake is one of my favourite cakes. That said, there are not many cakes I don’t like in all honesty! I love this healthier carrot cake recipe from Stacey in the Sticks. What makes this healthier carrot cake recipe so good
One of my favourite things to do is bake – and eat the final product, of course! But since starting healthy eating, I’ve had to find alternatives that are lower-calorie than the real deal. If you are not worried about the calories and want a more calorific and luxurious recipe then try this carrot cake recipe from a fellow blogger.
Carrot cake is in my top five favourite cake flavours, so this is one that I really needed to try.
Juicy plump raisins are one of the best parts of carrot cake, in my opinion, so of course, this version has them in.
If you don’t have all these ingredients but want a sweet treat how about 4 Ingredient Banana Bread Muffins?

Using low fat spread instead of proper butter brings the calories down a lot.
I find this healthier carrot cake recipe is a really great alternative to the real thing, and it cuts the syns down by a third, so you can still be within your daily allowance!
Using quark for the icing really reduces the calories, syns or whatever it is you count.

Tips to use quark and enjoy it
In recipes like this that need quark, there are a few simple things you can do to ensure it tastes good. Quark doesn’t have much flavour so ensure you flavour the dish well.
Quark is available in most large supermarkets now and even stocked in Aldi and Lidl. You can usually find it near soft cheeses in a tub similar to that you would buy cottage cheese in.
If using quark in a hot dish be careful. Due to the low-fat content of quark, it easily splits if heated too much or has hot water or hot liquid added to it. Be careful and stir in gradually and you should be ok.

Description
The best healthier carrot cake recipe for Slimming World followers at just approx 8 syns a slice it is better than the usual versions!
Ingredients
110g low fat spread (20 syns approx)
75g half spoon sugar (7.5 syns approx)
3 eggs
1 tsp cinnamon
1/4 tsp mixed spice
pinch of salt
1/2 tsp baking powder
175g self raising flour, sifted (28 syns approx)
1 medium-large carrot, peeled and grated
50g raisins (7 syns approx)
zest of 1 orange
1 tbsp orange juice
Frosting
1/3 to 1/2 small tub of fat free Quark
zest of half an orange, plus a little extra to decorate
1/4 tsp mixed spice
sweetener, to taste
Instructions
Preheat oven to gas 4/180°c/350°f.
Line a loaf tin with baking paper; or you could use a silicone one, with no need to line.
Beat together the low fat spread and sugar until light & fluffy. Mix in the eggs one at a time, then add the salt & spices.
Fold in the flour and baking powder, bit by bit, then mix in the carrot, raisins, and orange zest & juice.
Pour the mixture into the loaf tin and bake for 40-45 minutes, or until a metal skewer inserted comes out clean.
Leave to cool in the tin for a few minutes, then remove to a wire rack.
To make the frosting, mix together the quark, orange zest and mixed spice (and sweetener if you wish).
Once the cake is cooled, spread the frosting over the top, sprinkle a little zest, cut into slices, and enjoy!

I’ve tried to make SW cakes before and they’ve always had an odd texture, but this one is so yummy – lovely carrot cake 🙂
