This recipe is one of Stuart’s favourites. It was originally in a Slimming World book called Taste of Asia that is no longer in print I believe. It not only looks good but is really quite straight forward to make too. Full of colour and just as tasty reheated it could become one of your family favourites. I have made it with Quorn before too and it really is as simple as swapping the chicken to Quorn. As it doesn’t take as long to cook Quorn though I would just omit the initial step of cooking the chicken and just add it later on in the recipe when you re-add the chicken.

With the summer holidays approaching so is every parents panic. How will we keep the kids entertained for 6 weeks whilst avoiding them being stuck in front of screens all the time. When the weather is nice or we have lots of spare time it is easier to get the children doing things isn’t it. Or maybe take them out for the day.

I love summer evening parties though don’t get invited to as many as I would like (hint hint). I would like to start planning my own sometimes though so have been thinking of how best to organise one on a reasonable budget with a garden that isn’t huge! In the UK of course we also have the weather to contend with and that makes planning anything that isn’t in some way weather proof in advance a little difficult!

What is your favourite season? I love the summer I really do but after summer comes autumn and that is pretty good too. There are so many things I love about autumn and it feels like we are almost there. After all lets face it we don’t usually have summer for this long do we! We aren’t even in August yet, maybe we will have a long hot summer or maybe we are almost over the best of it. Time will tell but don’t go blaming me for talking about the autumn. I have started seeing the odd autumn bits in the shops like warmer pyjamas so I guess someone somewhere thinks it isn’t far off!

I am not really a car maintenance person and tend to leave these things up to the garage to sort out at the yearly service. I know however that I should really start checking things regularly myself to ensure the car is safe and has no problems. This morning with a group of friends we were discussing our children, all of whom go to the same school and have autism and their births. We had been discussing their different additional diagnosis’ and how they had come about and whether we would have more children. Whilst discussing this we got onto the topic of whether in the future tests will be available during pregnancy for autism and how we felt about that. As Ben is now 12, almost 13 (aaaaahhhh!) things have changed a lot already in the tests and scans available so I can imagine they will change more and there will one day be a test for autism but would I have the test in a future pregnancy if the test was available? Whether you agree with my views or not I hope this post helps you understand my feelings and give you a little insight into my life.
