I was recently making Stuart a Cowboy pie (recipe to follow) and decided to make myself something a bit different. It is a bit of a take on Homity pie I guess but cheesier! So this is how I made it, if you enjoy it do let me know.
Cheesy Leek and Potato Pie
A yummy comforting meal that is Slimming World friendly using the healthy extra A choice.
Place potatoes and boiling water in a pan and bring to the boil. Cook for around 20 minutes until soft enough to mash
Drain potatoes and mash then set aside.
Using a large frying pan and low calorie cooking spray fry the leeks, garlic and onions until soft.
Mix the leek mixture into the potatoes and set aside.
Beat the eggs in a separate bowl
Add the eggs, cottage cheese and grated cheese into the mashed potatoes and leek mixture and mix thoroughly. Season well and pour into a large casserole dish.
Bake in the oven for 30-40 minutes or until golden on top.
Please note that as at present 70g of EatLean protein cheese is a healthy extra a choice therefor this recipe if serving 4 makes it syn free when using the healthy extra a choice. If you swap to another cheese this will not apply unless you also adjust the amounts of cheese to reflect the appropriate healthy extra allowances.
