Cowboy Cheesy Potato Bake (Slimming World Friendly)

I wanted to make Stuart something a little different the other day. He loves the Cowboy pie I make (recipe here) so I wanted to alter that a little for him. Well this Cowboy Cheesy Potato Bake was a big hit and I am pretty sure he will be asking for it again. I shared the picture on my Instagram and was asked a few times for the recipe so here it is!

Cowboy Cheesy Potato Bake (Slimming World Friendly)
  1. Preheat Oven to 200'c/ 400'F/ Gas 6
  2. Spray a large baking tray with low calorie cooking spray and then spread the potato slices on it layering slightly.
  3. Grind a few twists of black pepper and sea salt over the potato slices then sprinkle with the mixed herbs and spray with more low calorie cooking spray. Place tray in oven for 20 minutes.
  4. Meanwhile spray a large frying pan with low calorie cooking spray and fry the minced beef for 5 minutes or until starting to brown.
  5. Add the garlic, onion and pepper to the frying pan and fry for a further 5 minutes.
  6. Add the chopped tomatoes, baked beans, Worcestershire sauce and tomato puree and stir well. Cook for a further 5-10 minutes until everything seems well cooked through. Time taken will depend on sizes you cut onions and peppers.
  7. Pour the mince mixture into a large casserole dish evenly and set aside.
  8. Remove the potato slices from the oven. They should be easy to pierce with a knife but not completely cooked.
  9. Layer the potato slices on top of the mince mixture, top with grated cheese and return to the oven for a further 20 minutes.
  10. Serve with vegetables or salad.
