Delicious Mixed Mushroom Risotto – Syn Free

I love risotto and love to create in the kitchen trying to achieve the perfect recipe and this one for a mixed mushroom risotto I think is absolutely delicious. It is syn free if you follow Slimming World and pretty tasty in my opinion. Ifn you make it do let me know what you think too.

Delicious Mixed Mushroom Risotto - Syn Free
A mixed mushroom risotto that is full of flavour and not full of syns it is perfect for those wanting a good risotto for a meal at home that feels like it was made in a restaurant.

Instructions
  1. Place the dried mushrooms and 300ml of boiling water into a jug and set aside
  2. Using a large heavy based frying pan spray well with the low calorie cooking spray and place over a medium heat.
  3. Add the garlic and shallots and fry for 3-4 minutes until soft
  4. Pour in the Arborio rice and stir well and fry for a further 2 minutes
  5. Add the crumbled stock cubes with 100ml of boiling water and stir continuously until water has been absorbed
  6. Add a further 100ml of boiling water, the balsamic vinegar and soy sauce and stir until absorbed
  7. Add the sliced closed cup mushrooms and the remaining water and stir continuously until fully absorbed
  8. Pour in the dried mushrooms and the water they are soaking in and mix through thoroughly. Simmer stirring occasionally to stop it sticking until all liquid is absorbed
  9. Serve.
