Mediterranean Vegetable Lasagne

This Lasagne is Slimming World Friendly and Syn free (uses healthy extra a choice). It is delicious and loved by Vegetarians as well as meat eaters. It is full of flavour but easy to prepare and then leave in the oven to cook. If you don’t like any of the vegetables included it would be easy to swap them for other vegetables if preferred.

Mediterranean Vegetable Lasagne
This tasty Mediterranean Vegetable lasagne is easy to make but full of flavour and loved by vegetarians and meat eaters alike.

Instructions
  1. Preheat oven to 200c
  2. Using a large saucepan add the Passata, basil, aubergine and courgette and heat on a medium temperature for 10-15 minutes
  3. Meanwhile using a large frying pan fry the onion and pepper in Frylight for approximately 10 minutes or until starting to brown slightly and softening.
  4. In a mixing bowl combine the quark, egg, mustard powder and vegetable stock until well combined. Then set this mixture aside.
  5. Mix together the vegetables in the frying pan and saucepan.
  6. Carefully layer the vegetables mixture and lasagne sheets in a large oven proof dish.
  7. Pour the quark mixture on top. Then top with the grated cheese.
  8. Bake for 40-45 minutes until browned lightly on top. Serve hot with a side salad.
