Roasted Red Pepper and Butternut Squash Soup

This soup is really tasty whilst being so easy to make. It is quite sweet in taste and full of flavour. Soup is perfect to keep you warm in the winter but I also love it in the summer as a quick meal to reheat without being too heavy. nb. The cheapest best value shop I have found roasted red peppers in a jar is B&M Bargains where they are around 89p a jar.

Instructions
  1. Place the stock and Butternut squash into a large saucepan and bring to the boil. Reduce the heat and simmer for 20 minutes.
  2. Chop the red peppers into small chunks and add to the Butternut Squash mixture.
  3. Allow to cool if preferred for safety depending on the type of blender you use. Then blend until smooth.
  4. Reheat if needed and serve, season if required.
