Description

A delicious Pasta arrabbiata made that is healthy and nutritious so perfect for dieters and their friends or family to all enjoy together


Ingredients

Scale

low-calorie cooking spray

1 large onion, chopped finely

400g can of chopped tomatoes

1 clove of garlic, crushed

1 red chilli, finely sliced

vegetable stock cube, crumbled

1 tbsp tomato puree

300g pasta shapes of your choice


Instructions

Spray a lidded saucepan with low-calorie cooking spray and heat until hot.

Add the garlic and onion and cook for 5 minutes until soft and starting to brown.

Add the tomatoes, stock cube and sliced chilli with 100ml of boiling water, cover and simmer for 10 minutes then stir in the tomato puree.

Meanwhile cook the pasta in boiling water according to packet instructions.

Drain the pasta and add in the tomato sauce, stir well then serve.



Notes

This sauce freezes well so can easily be made in advance so you only need to cook the pasta on a busy night.
