An easy recipe to make a tasty breakfast quesadilla recipe that can be enjoyed as a healthy unusual breakfast.



1 tbsp unsalted butter or olive oil – this can be substituted for Frylight if you prefer to save on syns

2 eggs, beaten

1/4 cup red onion, diced

1/4 cup red, yellow, orange or green peppers, diced

1/2 cup grated cheese (any type)

1/2 tsp salt

1/2 tsp pepper

1/4 tsp oregano

1 tortilla


1.      First, heat a skillet on medium heat with butter or olive oil. Alternatively, to lower the syn value of this recipe, choose Frylight. Add the onion and peppers until softened. Remove from the pan and set to one side for later.

2.     Add the beaten eggs to the pan and cook through until it creates a thin pancake-style circle. Remove from the pan and place on top of the tortilla along with the onion and peppers. Sprinkle over the cheese, salt, pepper and oregano then fold the tortilla in half.

3.     Brush the top of the tortilla with a little oil or melted butter. A couple of sprays of Frylight would also work. Place in the skillet for a couple of minutes on each side, pressing down with a spatula whilst being careful not to push out the mixture.


4.      Remove from the heat, serve and enjoy!


You can easily swap the veggies in this for other ones or even bacon if you prefer!
