Description
A tasty and nutritious soup recipe full of vitamins and simple to make all the family will love it.
Ingredients
4 small onions, roughly chopped
3 inch piece of ginger, finely grated
Zest and juice of 2 oranges
8–10 carrots, peeled and sliced
1 litre of vegetable stock
Large pinch of cayenne pepper (optional)
Sea salt and pepper to taste
Instructions
1. Saute the onion in a few sprays of low-calorie cooking spray until softened.
2. Add the garlic, ginger, orange zest and cook for a further minute then add the stock, cayenne pepper and carrots
3. Simmer until the carrots are tender
4. Blend until smooth using a basic hand stick blender.
5. Add the orange juice and season to taste with salt and pepper then stir well to mix.
6. Reheat gently if the blending process has cooled the soup.
