Description
A delicious celery soup which is easy to make and full of flavour. Perfect for winter lunches or a starter at a dinner party.
Ingredients
1 large leek, sliced
4 Celery sticks, chopped (save a few leaves for the garnish)
400g Celeriac, peeled and diced
2 bay leaves
1200ml vegetable stock
low-calorie cooking spray
Instructions
Using a large lidded saucepan coat it well with low-calorie cooking spray and heat until hot.
Add leek, celery and celeriac and fry for 3-4 minutes until they begin to soften.
Add the bay leaves and stock then bring to the boil.
Cover with the lid and simmer for 20 minutes until vegetables are soft.
Remove bay leaves and blend using a hand blender.
Reheat the soup to warm it through and garnish with the celery leaves.

Notes
If you are on a budget or prefer to use just celery why not swap the leek for onion or more celery?
