A delicious cheesecake which is low syn but absolutely delicious even if you are following Slimming World
Ingredients
11 Chocolate Hobnob Biscuits 49.5 Syns approx
50 Grams Low fat/ reduced fat spread 9 Syns approx
4 Large Eggs (Beaten)
750 Grams Quark
3 Tbsp Vanilla Extract
7 Tbsp Granulated Sweetener 3.5 Syns approx
Instructions
Preheat the oven to 200°c.
Line a 7 inch lose bottomed cake tin with baking paper and set aside.
Using a bowl over boiling water on the hob gently melt the spread. When almost melted add the crushed biscuits so the chocolate on them melts too. When all melted and mixed well spoon into the cake tin. It will only form a thin layer but this keeps the syns down and is adequate.
Mix together beaten eggs, quark, vanilla and sweetener in a bowl until well combined and then gently pour on top of the biscuit base.
Bake in the centre of the oven for 15 minutes then place a sheet of foil loosely over the top of the tin, careful not to let it touch the mixture, and return to the oven for another 30 minutes.
When firm, remove from oven and allow to cool for approximately one hour and then chill for one hour.
Serve with berries to make it a little healthier and tasty!
Notes
The whole recipe works out at approx 61 syns so with 8 portions I would round this to 8 Syns a portion.
If you swap the plain quark, vanilla extract and sweetener to vanilla quark then this would make the whole recipe approx 73.5 Syns which would be just over 9 syns per portion (approx).
