A hearty cheesy leek and potato pie without pastry
Ingredients

- Low Calorie Cooking Spray
- 3 cloves Garlic (crushed)
- 4 large Baking Potatoes peeled and cut into chunks
- 3 large Leeks (thinly sliced)
- 2 large Red onion (diced)
- 280 grams Eatlean Protein Cheese (Grated)
- 250 grams Fat free cottage cheese with chives
- 2 Eggs
- Black Pepper and Seasalt as needed to season.
Instructions

Preheat oven to 200°c

Place potatoes and boiling water in a pan and bring to a boil. Cook for around 20 minutes until soft enough to mash

Drain potatoes and mash then set aside.

Using a large frying pan and low calorie cooking spray fry the leeks, garlic and onions until soft.

Mix the leek mixture into the potatoes and set aside.

Beat the eggs in a separate bowl

Add the eggs, cottage cheese and grated cheese into the mashed potatoes and leek mixture and mix thoroughly. Season well and pour into a large casserole dish.

Bake in the oven for 30-40 minutes or until golden on top.
