An easy kofta kebab recipe perfect for a healthy alternative to a takeaway!
Ingredients
400g 5% fat beef mince
Half an onion, grated
2 cloves of garlic, crushed
1 tsp dried parsley
1 tsp smoked paprika
0.5 tsp ground cumin
0.5 tsp cayenne pepper (optional)
Salt and pepper to taste
1 tbsp fat-free fromage frais or Greek yoghurt
Kebab sticks (if using wooden ones, soak them in water for 30 minutes first to stop them burning)
Instructions
Get Ready: Preheat your oven to 200°C (180°C Fan / Gas Mark 6).
Mix It All Up: In a large bowl, add the beef mince, grated onion, crushed garlic, all the spices, and the fromage frais. Season with a pinch of salt and pepper. Now, get your hands in there and give it a really good mix until everything is well combined. Don’t be shy; a good mix is key to a flavourful kebab.
Chill Out: Cover the bowl and pop it in the fridge for at least an hour. This step is important as it helps the flavours to meld together and makes the mixture easier to shape.
Shape the Kebabs: Take the mixture out of the fridge. Divide it into equal portions (around 8 should do it). Take one portion and pack it firmly around a kebab stick, shaping it into a small sausage about 4 inches long. Repeat with the rest of the mixture.
Time to Cook: Place the kebabs on a baking tray lined with baking paper. Cook in the preheated oven for 20-25 minutes, turning them over halfway through, until they are browned and cooked through.
Serve and Enjoy: Serve your delicious, healthy kebabs straight away with a big side salad and a dollop of yoghurt. Enjoy your fakeaway with all the satisfaction, flavour, and none of the post-takeaway regrets.
