This chicken burrito bowl is easy to make and has lots of wonderful ingredients, most of which you will have in your drawers, cupboards, and pantry. You can swap things out for things you have in, or change things up. You can double up the quantities to make more, or just enjoy this as part of your meal prep.
Ingredients needed for the Chicken Burrito Bowl
1 boneless skinless chicken breast
1 cup of boiled rice
1/2 tsp lime juice
1 small chopped avocado
1 tbsp of chopped spinach
1/2 a cup of canned beans
1/2 a cup of canned sweetcorn
a handful of cherry tomatoes (quartered)
1/2 a red onion
1 leaf of lettuce
1 tbsp chopped jalapeno peppers canned or fresh
salt and pepper to taste
2tbsp olive oil
1tbsp lime juice
1/2 tsp paprika
1/2 sp ground cumin
1/4 tsp garlic powder
1/4 tsp onion granules
1/4 tsp dried oregano
pinch of salt and pepper to taste
Mix all of the marinade ingredients until smooth and marinate the chicken fillet for 20-30 minutes. You can also marinate overnight if you have the time.
Preheat a grill pan, add the chicken into it and fry for about 5-7 minutes on each side. Remove from grill pan and let stand 5 minutes before slicing. This resting time is perfect to help keep the chicken breast moist and juicy.
Lay a lettuce leaf in the bottom of the bowl. Arrange rice, corn, beans, chopped tomatoes and onions in piles.
Add thinly sliced chicken either as a section or on the top. The choice is yours.
Add half a peeled avocado and chopped jalapeno. Before serving, add a spoonful of Greek yoghurt. You could drizzle this all over if you wish. Enjoy!
