Description
An easy recipe for shrimp fried rice that can be made in one pot so saving on washing up and using ingredients already in the fridge!
Ingredients
3 cups of white rice
3 cups of chicken broth
1 cup of frozen mixed veggies
1/2 white onion, diced
2 cloves of garlic, minced
3 tbsp of soy sauce
1 tbsp of sesame oil
2 eggs
2 tbsp of butter
4 tbsp of your favourite Asian sauce
2 cups of large shrimp
Spring onion for garnish
Instructions
Get yourself a skillet or large frying pan and add 3 cups of uncooked white rice to it.
Then add the diced onion and mixed frozen veggies on top of the rice. You can add garlic, soy sauce, sesame oil, and shrimp.
Once all those ingredients are added to your skillet or pan, you can pour over the chicken broth.
Place a lid on the skillet or pan and cook over medium heat until the rice comes to a boil.
Reduce the heat by half, and allow to simmer until there is no liquid remaining in the skillet. This will take about 10 to 12 minutes.
When the liquid has evaporated, make a small well in the centre of the skillet. Then crack two eggs into the well and scramble. Allow the eggs to cook until they are soft set.
If desired, dollop your favourite Asian sauce around the skillet and finish off by adding the butter and spring onions.
Stir and serve immediately.
