Delicious healthy and easy Falafel with a yoghurt dressing recipe
200g dried chickpeas soaked overnight in water or a 300g can of chickpeas well drained
2 tsp ground cumin
1 tsp ground coriander
0.5 tsp ground cinnamon
1 small red onion chopped finely
1 tbsp plain flour
0.5 tsp baking powder
0.5 tbsp lemon juice
Frylight or other low calorie cooking spray
Small bunch of fresh parsley or 1 tbsp dried parsley
Small bunch of fresh coriander or 1 tbsp dried coriander leaf
For the Dressing
200ml fat free yoghurt
1 tsp ground cumin
0.5 tablespoon lemon juice
1 tsp dried mint
Drain chickpeas well and put them in a food processor or blender until coarse.
Add spices, onion, garlic, herbs, lemon juice, baking powder and flour.
Mix well and season well with salt and pepper.
Chill the mixture for half an hour before moulding into balls or patty shapes. It should make 8-12 balls. If you struggle to make balls as it won’t stick together add a couple of tablespoons of water until it does. Be careful not to overdo it.
Bake the falafel in the oven for 25-30 minutes at 200°c
To make the dressing combine all dressing ingredients in a bowl and serve.
