Description
Quick and easy Mexican burritos to make in 20 minutes the whole family will love.
Ingredients
3 chicken breasts or equivalent in cooked chicken pieces
3 peppers finely diced
1 red onion
2 pouches of Mexican rice
2tbsp smoked paprika
300g cheddar cheese
6 large wheat tortillas (approx 10 inch in size)
BBQ sauce (approx 1 tbsp for each tortilla)
Instructions
Cut your raw chicken breasts into small chunks, the smaller the better as it makes the burrito easier to fold or roll and also the meat will cook quicker.
Finely dice the onions and peppers.
Fry the chicken for 5 minutes then add paprika, onion and peppers and fry until cooked.
Add the rice pouches and cook for a further 2 minutes stirring well to mix then set aside.
In each tortilla add a little cheese, either sliced or grated, bbq sauce and then top with the chicken mix and roll/fold/crimp as preferred.
Cook the burritos in a dry frying pan on medium heat until lightly browned all over.
Notes
Remember the mixture is all cooked so the frying of the folded/rolled or crimped burrito simply needs to be enough to melt the cheese inside and brown the tortilla.
