Description
A delicious, easy to make, rich tomato soup using ingredients predominantly found in the pantry!
Ingredients
500g passata
400g chopped tomatoes
400g baked beans
300g tin carrots (including water they are in)
8 small pickled onions
500g cherry tomatoes
1 roasted red pepper from a jar in brine (NOT oil!)
3tbsp tomato puree
2tbsp dried mixed herbs
1/2 pint of water
Instructions
It really couldn’t be easier. Put it all into a pan, blend until smooth using a hand blender, then heat and serve! I like quite a thick soup, however, you can easily add more water to make it to your preferred consistency. I prefer to blend everything while it is cold and this is what I did with this soup too. I can be rather accident-prone so it helps stop me from getting burnt although I still tend to cover the kitchen in food! See – there is a reason I don’t do recipe or preparation videos!
Notes
Please do bear in mind I made this recipe myself and kept adding things and didn’t realise quite how much I was making! I always use the cheap brands so no need to splash out own brand tasted great!
