Description

An easy, budget-friendly recipe for Spanish Chicken that can be made in the slow cooker and is great for all the family.


Ingredients

600g chicken thigh fillets, diced.

2 red peppers (sliced)

2 green peppers (sliced)

500g Passata

400g tin of chopped tomatoes

1 large onion, sliced

2 teaspoons chopped garlic

1 chilli deseeded and finely chopped

1 tbsp mixed herbs


Instructions

1. Put chicken thigh chunks in the slow cooker.

2. Place the slices of onion and pepper on top of the chicken then pour over the Passata, chopped tomatoes, garlic, herbs and chilli and stir gently to mix.

3. Place the lid on the slow cooker and cook on low for 8 hours.
