Description
A tasty frittata which can be thoroughly enjoyed by the whole family. Spinach is one of the main ingredients and so good for you too.
Ingredients
Low-calorie cooking spray
1 large red onion finely sliced
150g baby spinach leaves
120g frozen peas
6 large eggs
salt and pepper
Instructions
Heat the low-calorie cooking spray in a large frying pan over a low heat.
Add the onion and cook gently for 8 minutes or until soft.
Stir in the spinach and peas and cook for a further 2 minutes.
Beat the eggs and some salt and pepper in a measuring jug and pour over the vegetables ensuring the vegetables are spread evenly.
Cook on a low heat for 8-10 minutes.
Meanwhile put the grill on high to preheat and move the frying pan to under the grill and cook for a further 3-4 minutes until the top is set and slightly coloured.
Serve hot or cold.
