Sweet potato houmous with zucchini chips or courgette fries

Description

An easy sweet potato hummus recipe for a tasty houmous with zucchini chips or courgette fries as a healthy alternative.


Ingredients

1100g sweet potatoes (cooked and drained)

2tbsp crushed garlic

1tbsp olive oil

salt to taste

1 lime (juiced)

0.5 cup of water

1 large courgette or zucchini sliced thinly

2 tbsp olive oil (separate to the oil above)

sea salt to taste


Instructions

Get all the ingredients for the hummus together. Then place all the hummus ingredients into a food processor and pulse until well combined and smooth. Try not to overdo this. You want a smooth consistency but not something that is too runny.  

Add water only if the mixture is too thick. Your hummus is now ready. You can add a few different flavours to this recipe once you have perfected the basics.  

Preheat the oven to 140°c and line a baking sheet with parchment paper ready to make your zucchini chips.  

Use a mandoline slicer or knife to cut zucchini or courgette into thin even disks. 

Place the zucchini discs on a lined baking sheet and press with a paper towel to remove any moisture. This will help the zucchini crisps to get the desired texture. 

Brush olive on each disc and sprinkle lightly with sea salt. 

Bake the zucchini crisps for 1 ½ hours until golden brown and crispy.
