Description

A delicious easy recipe for Tex-Mex quinoa salad which is perfect to enjoy for weight loss and a healthy lifestyle


Ingredients

Scale

low-calorie frying spray.

3 cloves of garlic, finely chopped.

400g black beans, drained and rinsed.

400g sweetcorn drained and rinsed.

400g chopped tomatoes/3 fresh tomatoes.

170g dry quinoa.

500ml vegetable stock.

1 tbsp crushed chillis.

1 tsp cumin.

1 tsp salt.

1 tsp pepper.

Toppings: (optional)

Lime juice.

Jalapeños.

Fresh coriander.


Instructions

Add the spray to the pan, and add the finely chopped garlic. Fry until lightly browned.

Add black beans, sweetcorn, and tomatoes. Mix and heat through until simmering.

Add the dry quinoa and stock, and mix thoroughly to ensure the quinoa is evenly distributed.

Add crushed chillis, cumin, salt, and pepper. Mix thoroughly.

Cover and simmer for 15 – 20 minutes, stirring often.

Plate, and add toppings of your choice.



Notes

If you’re cooking this as part of a meal-prep routine, this will keep in an airtight container in the fridge for 3-4 days, or you could freeze it for a quick reheat in the microwave.
