Cowboy Cheesy Potato Bake

Description

This recipe for cowboy cheesy potato bake is Slimming World friendly, full of yumminess and so easy to make. It feels so naughty but actually isn’t!


Ingredients

Low Calorie Cooking Spray

300 Grams 5% Fat Mince Beef or 300g Quorn mince

4 Peppers – red, orange or yellow (deseeded and cut into bite size chunks)

2 Large Red Onions (diced)

400 Grams Baked Beans

3 Tbsp Worcestershire Sauce or 3 Tbsp Hendersons relish.

2 Tbsp Tomato Puree

4 Large Baking Potatoes Sliced into 5mm Thick Slices

2 Cloves Garlic (crushed)

180 Grams 50% Less Fat Cheddar (grated)

2 Tbsp Mixed Herbs (dried)

Black Pepper and Sea Salt

400 Grams Can of Chopped Tomatoes


Instructions

Preheat Oven to 200°c/ 400°F/ Gas 6

Spray a large baking tray with low calorie cooking spray and then spread the potato slices on it, layering slightly.

Grind a few twists of black pepper and sea salt over the potato slices then sprinkle with the mixed herbs and spray with more low calorie cooking spray. Place tray in oven for 20 minutes.

Meanwhile spray a large frying pan with low calorie cooking spray and fry the minced beef for 5 minutes or until starting to brown.

Add the garlic, onion and pepper to the frying pan and fry for a further 5 minutes.

Add the chopped tomatoes, baked beans, Worcestershire sauce/Hendersons relish and tomato puree and stir well. Cook for a further 5-10 minutes until everything seems well cooked through. Time taken will depend on the sizes you cut the onions and peppers.

Pour the mince mixture evenly into a large ovenproof dish and set aside.

Remove the potato slices from the oven. They should be easy to pierce with a knife but not completely cooked.

Layer the potato slices on top of the mince mixture, top with grated cheese and return to the oven for a further 20 minutes.

Serve with vegetables or salad.
