Description
An easy family meal full of flavour and perfect for healthy eaters who want a different way to use mince.
Ingredients
1 lb lean beef (or turkey if you prefer)
1 tablespoon dry onion granules
1 tablespoon garlic granules
Salt & pepper to taste
1 green bell pepper, diced small
1 yellow bell pepper, diced small
1 orange bell pepper, diced small
1 onion, diced small
1 cup rice, cooked (use my easy rice recipe if necessary)
240g Passata with onion and garlic
75g mozzarella cheese, grated
75g cheddar cheese, grated
Instructions
Cook rice, as usual, feel free to use my foolproof method if you struggle with this. Set rice aside until needed.
In a large frying pan fry mince, onion, peppers and seasonings until thoroughly cooked and then drain any liquid from the pan.
Stir in the cooked rice and heat if necessary until all is warm.
Meanwhile, heat the passata in a separate pan to pour over or if preferred mix it with the mince and rice.
Serve in bowls with tomato passata spooned over and grated cheese sprinkled on top.
