Easy Instant Pot Lasagne soup

Description

An easy Instant Pot recipe for lasagne soup for a perfect Italian soup recipe.


Ingredients

450g of lean minced beef

1 small white onion, diced

2 tablespoons of crushed garlic

2 cups of beef stock

1/2 teaspoon of dried garlic granules

1/2 teaspoon of onion granules

1/2 teaspoon of dried basil

1/2 teaspoon of sea salt

1/2 teaspoon of freshly ground black pepper

1/2 teaspoon of smoked paprika

1 jar of pasta sauce or your own healthier pasta sauce (recipe)

230g of lasagne sheets, broken into approximate quarters or thirds

1 cup of ricotta cheese

1 cup of grated or shaved parmesan cheese (or vegetarian equivalent)

1 cup of grated mozzarella cheese


Instructions

Get your Instant Pot and turn it on to the saute function. 

When it has got hot, you can then add your lean minced beef. Break the beef up as it cooks to ensure that it is browned all the way through. 

Now you can add the onion and garlic to the instant pot when the meat is brown, and saute for 2 minutes. Then turn the instant pot off. 

Add beef stock (vegetable if making the recipe vegetarian) and stir to deglaze the instant pot. Once you have done that you can add the jar of pasta sauce or your own pasta sauce.

Meanwhile, combine the garlic granules, onion granules, sea salt, basil, black pepper and smoked paprika in a small bowl. Then add to the instant pot and stir.

Add the broken lasagne pieces, and submerge them completely into the liquid. Do not stir, but if needed, move them around with a spoon until all lasagne pieces are covered with liquid.

Place the lid on the instant pot and seal. Then use the manual setting and set the timer for 5 minutes. It will take about 10 minutes to reach pressure.

When the timer sounds, allow the instant pot to naturally release steam for 2 minutes, then use the quick-release valve.

Remove the lid and then add parmesan cheese and ricotta cheese. Give everything a good stir. 

Cover with mozzarella cheese and place the lid on the instant pot for 2 -3 minutes to allow the cheese to melt. Serve and enjoy!
