Ingredients needed to make the lasagne soup

First, ensuring you can get all the ingredients together is a good idea. Focusing on this first means that the cooking process will be simple. You will need:

  • 450g of lean minced beef
  • One small white onion, diced
  • Two tablespoons of crushed garlic
  • 2 cups of beef stock
  • ½ teaspoon of minced garlic flakes
  • ½ teaspoon of onion granules
  • ½ teaspoon of dried basil
  • ½ teaspoon of sea salt
  • ½ teaspoon of fresh black pepper
  • ½ teaspoon of smoked paprika
  • 1 jar of pasta sauce or your own homemade pasta sauce
  • 230g of lasagne sheets, broken into quarters or thirds
  • 1 cup of ricotta cheese
  • 1 cup of grated or shaved parmesan cheese
  • 1 cup of grated mozzarella cheese

How to make the Instant Pot Lasagne Soup

Now that you have all your ingredients to hand, it is time to make the lasagne soup. 

This recipe serves six, so it is perfect for a big family or to leave you some for another day.

Get your Instant Pot and turn it on to the saute function.

When it has got hot you can then add your lean ground beef. Break the beef up as it cooks to ensure it is browned all through.

Add the onion and garlic to the instant pot when the meat is brown and saute for 2 minutes. Then turn the instant pot off.

Add stock and stir to deglaze the instant pot.

Once you have done that, you can add the jar of pasta sauce or your homemade alternative.

Meanwhile, combine the garlic granules, onion granules, sea salt, basil, black pepper and smoked paprika in a small bowl.

Then add this seasoning mix to the instant pot and stir.

Add the broken lasagne sheets, and submerge them completely into the liquid. Do not vigorously stir; if needed, move them around with a spoon until all are covered with liquid.

Place the lid on the instant pot and seal. Then use the manual setting and set the timer for 5 minutes. It will take about 10 minutes to reach pressure.

When the timer sounds, allow the instant pot to naturally release steam for 2 minutes, then use the quick-release valve.

Remove the lid and then add parmesan cheese and ricotta cheese. Give everything a good stir.

Cover with mozzarella cheese and place the lid on the instant pot for 2 -3 minutes to allow the cheese to melt. Serve and enjoy!

Add some extra vegetables to this dish to make it more nutritionally balanced. Mushrooms, courgettes, aubergine, and carrots will all be great additions. This is a great recipe to use up any veg you might have lurking in your fridge. 

You could use ground turkey or even chicken mince instead. Both will be great with the flavours of the lasagne soup.

1 cup of ricotta cheese

1 cup of grated or shaved parmesan cheese (or vegetarian equivalent)

1 cup of grated mozzarella cheese


Instructions

Get your Instant Pot and turn it on to the saute function. 

When it has got hot, you can then add your lean minced beef. Break the beef up as it cooks to ensure that it is browned all the way through. 

Now you can add the onion and garlic to the instant pot when the meat is brown, and saute for 2 minutes. Then turn the instant pot off. 

Add beef stock (vegetable if making the recipe vegetarian) and stir to deglaze the instant pot. Once you have done that you can add the jar of pasta sauce or your own pasta sauce.

Meanwhile, combine the garlic granules, onion granules, sea salt, basil, black pepper and smoked paprika in a small bowl. Then add to the instant pot and stir.
