Healthy creamy smoked salmon pasta recipe

This is one of my new favourite quick and healthy recipes. I love it because it’s so simple to make and the ingredients are easy to source without breaking the bank.

It’s one of my go-to meals at the moment – plus it’s a healthy meal too. I really try to avoid sauces from jars with pasta as I couldn’t believe the salt and sugar they are put into them when I started looking into it.

This particular recipe is also changeable, so you can switch ingredients here and there to change it up a bit!

Salmon pasta

If you follow Slimming World, Weight Watchers (WW), Noom or any other weight loss plan this is a great recipe to try. It is of course important to check yourself any plan you follow and remember all nutritional information and ingredients are found in the recipe card below.

Ingredients – serves 2

Cooking time 12 minutes

200g capellini pasta – it’s slightly thinner than spaghetti and lighter too.

100g Smoked salmon – I opt for trimmings as it doesn’t matter what it looks like as you’ll be tearing it up anyway.

1 x lemon

1 x courgette – the vegetables can be interchangeable

2 x spring onions

2 tablespoons of half fat crème fraiche

Capers (optional)

How to make this healthy creamy smoked salmon pasta recipe with lemon zest

Use a potato peeler to peel the courgette to create a curl effect, once you have done this finely chop the spring onions and keep to one side with the courgette.

Then snap the capellini pasta in half and boil it in a large saucepan on low heat – it does cook fairly quickly so watch it doesn’t over-cook, also be sure to keep a cup full of the water the pasta is in.

While the pasta is cooking tear the smoked salmon into a frying pan, I find salmon can stick a little so I put a teaspoon of coconut oil into a pan and lightly fry it – make sure the frying pan is on low heat.

I then grate some lemon zest into the frying pan with the salmon, this will complement the salmon really well. Then add the courgette and spring onion to the pan whilst continuing to stir it.

I would now add the capers, I know they are an acquired taste so feel free to leave them out.

Now the pasta should be cooked I add a cup full of the water from the saucepan into the frying pan, drain the rest of the pasta and add the pasta into the frying pan with the salmon and vegetable mix.

Next, I put the two tablespoons of crème Fraiche into the mix and squeeze the lemon juice into it. Make sure the crème Fraiche is mixed in with the water and evenly spread around the pan.

When everything is mixed in together, serve on to a dish and if you fancy add a bit of parmesan on top for extra flavour.

All that’s left to do is enjoy, guilt-free!
