Description
This recipe is really easy. I’m sure you’ll love it. It will quickly become a family favourite. It’s also easy to make when you have a BBQ or guests over.
Ingredients
500g chicken breast
4 tbsp olive oil
2 tbsp lemon juice
1 tbsp apple cider vinegar (or white vinegar)
2 garlic cloves, mashed
1 tsp dried oregano
1 tsp sumac
2 tbsp chopped fresh parsley
1 tbsp chopped fresh basil
Optional: 2 tbsp fat-free natural yoghurt
Instructions
Place all ingredients except the chicken in a large bowl and mix them to combine well.
Cut your chicken into cubes of about 1 inch and pour the marinade over the chicken. Rub well to ensure all chicken pieces are well coated.
For better flavour, cover and let it marinate for at least an hour, up to 24hrs or overnight in the fridge. Can also be frozen marinated.
Once marinated or coated, start skewering pieces of chicken into bamboo skewers.
Place chicken in sticks and grill on medium heat until charred then flip over. Once their charred on both sides and perfectly cooked inside, serve hot. Can be served with your favourite dip, in a tortilla, with salad or on their own!
