Lemon garlic chicken kebabs – the name of this recipe is much trickier than the method, I promise you. I know when you make this you will definitely love it! It is easy to make for the BBQ or on the grill. If you have a George Foreman type grill or teppanyaki this can easily be cooked on that too!
When to enjoy lemon garlic chicken kebabs
With the weather heating up right now, many of us dream about BBQs. A time to gather family members and friends around the patio to eat, drink and be merry. If that sounds like your idea of a perfect weekend, then get this recipe added to your barbeque repertoire.
(Of course, if you’re not keen on al fresco dining, this can be made and devoured indoors, too!)
The combination of the freshly squeezed lemon juice (although you can cheat and use Jif if you prefer) and crushed garlic (I have the best garlic press – you don’t even have to peel the cloves before use!) is amazing but not overpowering. The use of herbs adds an incredible freshness to it, meaning you don’t feel as though you are eating something heavy or unhealthy.

If you are looking for the syns in this recipe then the only syns are in the olive oil. You can easily reduce the amount of olive oil if you prefer or omit it altogether and add a little water instead. It will change the taste slightly but if it helps your plan this week then the choice is yours.

This is a really easy recipe I know you will love, it will soon become a family favourite and easy to make when you have a bbq or guests over!
- Place all ingredients except the chicken in a large bowl and mix them to combine well.
- Cut your chicken into cubes of about 1-inch and pour the marinade over the chicken. Rub well to ensure all chicken pieces are well coated.
- For better flavour, cover and let it marinate for at least an hour, up to 24hrs or overnight in the fridge. Can also be frozen marinated.
- Once marinated or coated, start skewering pieces of chicken into bamboo skewers.
- Place chicken in sticks and grill on medium heat until charred then flip over. Once their charred on both sides and perfectly cooked inside, serve hot. Can be served with your favourite dip, in a tortilla, with salad or on their own!
