Description

Delicious quiches with a crust which is not pastry but just as tasty!


Ingredients

8 24g Old El Paso Stand and Stuff Tortillas Others can be used but syn values may be different

250 Grams Garlic and Herb Quark

6 Large Eggs (Beaten)

1 Red Pepper (deseeded and diced)

1 Yellow Pepper (deseeded and diced)

4 Spring Onions (finely Sliced)


Instructions

Preheat oven to 200°c.

Place all the tortillas into a large roasting tin so they are not squashed in and hold their shape.

Mix together well the beaten eggs and quark.

Split the spring onions, red pepper and yellow peppers evenly between all the tortillas. Just place the diced pieces inside each tortilla.

Pour the egg and quark mixture over the vegetables in the tortillas so all are filled evenly.

Cook in the centre of the preheated oven for 25-30 minutes or until the quiche mixture is set and the shell crispy.



Notes

If the Quiches are not eaten immediately or when cooled then the tortilla bases will soften. They can be briefly put under the grill to crisp again or enjoyed as they are.

Use the plain Tortillas not the kits which include other things you do not need for this recipe. If you use the smaller mini tortillas then adjust syns accordingly as they are currently 2 syns each on Slimming World.
