Delicious mini quiches, perfect for a meal or snack for all the family.
1. Fry the onions in the cooking spray with the sweetener until starting to soften, then add the rosemary and cook until onions are soft.
2. Mix in with the beaten eggs and cottage cheese and then spoon into silicone baking cases or similar. A ladle can make this easier or even pouring the mixture from a jug! I use silicone cases as they don’t stick and therefore makes it easy!
3. Bake in preheated oven for around 30 minutes 200°c.
They are lovely hot or cold and can be kept in the fridge for a few days with no problems.
