Tasty easy slow cooker sausage casserole that all the family will enjoy
600 grams Sweet potato chunks if making this suitable for SP use butternut squash instead
400 grams Baked Beans
400 grams Can of Chopped Tomatoes
500 grams Passata
5 Peppers – red, orange or yellow (deseeded and cut into bite size chunks)
3 Medium Red Onions (peeled and quartered)
300 Grams White Mushrooms (quartered)
2 TBSP Smoked Paprika
1 TBSP Ground Cumin
If you are making the casserole with different sausages, eg because I am vegetarian or people have different preferences then the sausages will need to be cooked separately and added in to each portion at the end.
Place all ingredients in the slow cooker and stir well.
Cook on high for 4 hours or low for 7-8 hours.
