Description
This Slimming World friendly recipe only has any syns in the sausages you choose.
Ingredients
8 Sausages – Chilled work better than frozen
4 Sweet potatoes
2 White Potatoes
3 Peppers
300g White Mushrooms
2 Red onions
200g Baby plum tomatoes
2 tbsp Dried Rosemary
Instructions
Preheat the oven to 200°c/390°F/Gas 6
Using a large roasting tray place the sausages in the tin, scatter the baby plum tomatoes over and set aside.
Chop all vegetables in to bits size chunks and scatter on top of the sausages and tomatoes. Sprinkle over the rosemary.
Shake tray to ensure all the items are well mixed.
Spray top of the vegetables lightly with low calorie cooking spray.
Bake for 30-40 minutes depending on size of chunks of vegetables.
Serve with 2 sausages per person.
Notes
If using frozen sausages then cook them for a little while to start them cooking first before adding other ingredients.
