An easy recipe for Instant pot rice pudding

But this instant Pot rice Pudding is going to take away any negative thoughts you have about rice pudding and slowly turn it into your new favourite dessert. My quick and easy recipe will have delicious and vanilla-flavoured rice pudding ready in minutes. 

Desserts are something that many families don’t focus on, but yet, they are the perfect end to a meal and can help to satisfy and fill tummies. Rice pudding is a much-loved favourite and this Instant Pot recipe will help you create your own version in no time at all.

Ingredients needed to make the Instant Pot Rice Pudding

First, it is a good idea to ensure you can get all the ingredients together. Focusing on this first means that the cooking process will be simple. Whilst I normally use grams for recipes, I feel the cups in this recipe make it super easy so I recommend you consider it. You will need:

  • 1 cup of white pudding rice
  • 1 ½ cups of water
  • A pinch of salt
  • 2 cups of milk
  • ½ cup of sugar
  • 2 eggs
  • 1 tsp of vanilla essence

How to make the Instant Pot Rice Pudding

Now that you have all your ingredients, it is time to make the rice pudding. 

Serves 4

Gather all of your ingredients together. Add the rice, water and salt to the instant pot.

Seal and select high heat, and then set the timer for 3 minutes. It will take about 10 minutes before the timer begins to countdown as the Instant Pot gets up to temperature. 

When the timer beeps, turn off the instant pot. After 10 minutes, quickly release the steam.

Then add 1 ½ cups of milk and sugar. Give everything a good stir.

Whisk the eggs and the remaining ½ cup of milk in a small bowl.

Pour the vanilla into the egg mix. Then pour the egg mixture into the rice.

Turn the instant pot to saute, and allow it to cook until it comes to a boil. 

Remove the liner from the instant pot and allow it to cool, and thicken.

Serve warm or cold, with cinnamon sprinkled over the top. Or check out some of my other suggestions later in the post.

When it comes to any recipe, it is always a good idea to understand what notes and tips you can use to help you fully utilise the recipe and have success each time. If you want to make the most of this tasty rice pudding recipe, here are some extra tips and tips to help.

  • While it doesn’t take long to cook the rice, you need the Instant Pot to heat up and to allow time for the rice to thicken. You can have this completed within 30 minutes. 
  • When you leave the rice for the first time, the pressure will slowly naturally release. As you manually release the pressure, be careful as it will still be very hot. 
  • Use a liner for your instant pot as this creates less mess and helps separate the rice pudding from the pot to cool and thicken faster.

Variations to try

Like with many recipes, once you have tried them out a few times, you can look to make some changes and vary the recipe to suit your tastes and preferences. So I wanted to share some of them you might want to try. 

  • Use different flavours. You could do this by using a different extract instead of vanilla. Almond extract would taste amazing. 
  • Whole milk could be best for this recipe, but you can also use semi-skimmed or even skimmed if you prefer. 
  • Add a dash of cream to make this rice pudding even creamier. 
  • Add some chocolate to melt to make a chocolate rice pudding.

How should I serve the Instant Pot Rice Pudding?

This is a great recipe to serve as a dessert. You can sprinkle across some cinnamon, add a spoonful of chocolate spread or jam, or even serve with some fresh fruit. Berries are great with rice pudding. Add chocolate chips and peanut butter, or drizzle over some sauce like caramel. The options are endless. 

How do I store the Instant Pot Rice Pudding?

If you have any leftovers, let them cool completely and transfer them to an airtight container. You can store them in the fridge for up to four days. You can enjoy rice pudding cold as well as warm. If you want to reheat the rice pudding, simply do it on the stove or microwave until it is warmed. 

Can you make this Vegan?

Sure you can! Just use your preferred plant-based milk for the rice pudding recipe. Almond or oat milk would taste great.

Can you eat this rice pudding on Slimming World or other diets?
