Classic Minestrone Soup

Heart-warming, easy to make and super delicious- that’s what this minestrone soup is all about! Start by chopping some seasonal veggies (butternut squash, courgette, potatoes and green beans are good choices) and sautéing them in a stockpot with some onions, celery, carrots and tomato puree.

Next add in some chopped garlic, thyme, oregano, chilli flakes and season with salt and pepper and cook until the veggies soften. 

Add in some stock, a handful of uncooked pasta and cook until the pasta is done. You can also add some chopped greens and/or beans into the mix to make it more nutritious.

Veggie Noodle Soup

Perfect for vegetarians, classic veggie-packed noodle soup is just right to try out.

Pick your choice of veggies (cabbage, cauliflower, broccoli, carrots, beetroot, courgette, mushrooms, potatoes, tomatoes, peas etc) and sauté them with some chopped garlic and onions in a saucepan until they turn soft.

Add in some veggie stock, boiled pasta, fresh cream or a dollop of fat-free fromage frais and your favourite spices and herbs to give it that kick of flavour. Bring it to a boil and you’re all done.

Packed with protein, this is another delicious pasta soup you can try making on a cold winter night. First, sauté some chopped celery, carrots and onions in a large saucepan until soft, followed by chopped garlic.

Cook for a minute and then add some stock, chopped tomatoes, cannellini beans, cooked pasta, grated parmesan cheese and your favourite seasonings and bring it to a boil. Your pasta and bean soup is all ready to dig into! 

Tomato & Beef Soup

Wholesome, hearty and packed with flavours you just can’t go wrong with, this soup is another great winter essential to try out.

Start by softening some chopped garlic and onions in a saucepan with some oil or low-calorie cooking spray and then add ground beef and cook until no longer pink.

Next, pour in chicken stock, pasta and some tomato-based pasta sauce and cook until the pasta is well done. Season with some salt and pepper or throw in a couple of chillies for a spicy kick and you’re all done. 

Italian Tortellini Soup

Got some Italian sausage that you can put to use? This recipe might just be the perfect one to try out.

In a large, heavy-bottomed pot, sauté some onions, garlic and crumbled Italian sausage for a few minutes.

Next, add in some vegetable or chicken stock, chopped tomatoes, salt, pepper and loads of chopped basil and cook for a few minutes. Next add some tortellini and chopped spinach and cook until the pasta is done. That’s it!
