It is easy to make this easy mushroom soup recipe at the weekend and then keep in the fridge to reheat and put in a flask in the morning!

Everyone knows vegetables are good for you, don’t they? They are healthy and filling for very few calories!

The best vegetables are those with low-calorie density.

This means if you eat 100g of spinach, for example, it is just 23 calories and 100g of crisps, which would be just as filling, is around 536 calories!

Soup is a great snack on cold winter evenings and could be a good alternative to other comfort foods. If you always make a little extra and freeze some you could have a choice in the freezer every time you need a snack or a bit of warmth.

Soup is a great way to get extra vegetables into your diet. Why not add a mug of soup to a meal that doesn’t have vegetables in as an alternative to a side portion of vegetables for a change?

Description

A delicious easy mushroom soup recipe whether you have it blended or not.


Ingredients

Scale

600g mushrooms roughly chopped

2 Onions roughly Chopped

1 jacket size potato (cubed)

2 sticks of Celery (roughly chopped)

3 Cloves of Garlic (finely chopped or crushed)

1 tsp Dried Thyme

1/2 tsp Ground Nutmeg

1 tsp Balsamic Vinegar

2 Vegetable Stockpots made with 600ml Boiling Water

Low-Calorie Cooking Spray


Instructions

1. Spray a deep lidded pan with frylight, place over a medium heat and fry the onions and garlic for 5 minutes (without the lid on).

 

2. Add the potatoes, celery, mushrooms, thyme and nutmeg. Put the lid on the pan and cook for 10 minutes.

 

3. Add the Stock and continue to cook for a further 20 minutes.

 

4. Blend the mixture if required using a hand blender until smooth and serve.

  1. I’ve never had mushroom soup without it being whizzed up, so I was a bit concerned about how flavoursome it would be. Stupid worries – it was GORGEOUS!
