If you are on a budget it is easy to overlook soup as a meal option. It really needs to be considered though as it can be filling, especially a chunky one. It is one of the Cheap Slimming meals I recommend.
A perfect way to use up vegetables that may be slightly past their best or scraps of meat leftover from a meal is slimming soup recipes.
If you follow Slimming World, Weight Watchers (WW), Noom or any other weight loss plan you can usually count the ingredients within these recipes in your allowances. It is of course important to check yourself any plan you follow and remember all nutritional information and ingredients are found in the recipe cards.
6 Ways of making quick easy soup recipes more filling
By adding grains such as bulgar wheat, pearl barley or oats to soup it thickens it a little and makes it much more filling for a few pence.
All these are available cheaply dried and can easily be added with the stock and cooked into the soup.
Add starchy vegetables
Potatoes, sweet potatoes, parsnips and squashes are a great way to bulk out slimming soup recipes and make them more filling.
Cube them into a chunky one or blend into a smooth soup for a filling addition.
If you have a little leftover pasta from a meal or just have plenty in the house then using it in a soup is perfect.
A few pieces of pasta really bulks it out and is so cheap too.
Pulses such as lentils, beans and chickpeas can easily be added to slimming soup recipes cheaply. Pulses are filling and full of protein which keeps you feeling fuller for longer.
If you are using dry pulses they are cheaper but usually need soaking overnight first.
Have it chunky
A chunky soup always feels more filling than one which is smooth. It takes longer to eat and chew which inevitably makes it feel like more of a meal.
If there are some members of your family who don’t like certain vegetables you can always blend those ones down and leave the rest chunky!

Keep the skin on
The skin of vegetables is often full of fibre so if you can keep the skin on things like potatoes and squash when making the soup.
The higher amount of fibre will keep you feeling full longer too.

There are so many ways to flavour soup in a similar way to any meal. Check out these easy spice blends to help you make a fajita flavour or add a chilli flavour.
Adding herbs is a great way to add flavour too whether that be fresh herbs from the garden or dried herbs from the supermarket.
This is a great time to use herbs you have frozen when you have bought them reduced!
Easy ways to make a slimming soup when you are busy
Making soup doesn’t have to mean standing at the hob for ages with a bubbling pan. There are other ways to make it without too much effort. Soup makers are amazing but these options will help if you don’t have one too!
Roast vegetables in the oven whilst cooking other meals to give them a tasty roasted flavour then boil the kettle, add some stock, blend if preferred and then reheat to serve!
Another option is to make it in the slow cooker! Have you ever done that? If you are having a chunky soup it is even easier as you don’t need to blend afterwards!
Pop everything in and leave it on while you get on with everything else! Soup is a great recipe if you are trying to lose weight before summer.
