Broccoli and Stilton soup is one of my favourite soups but shop-bought ones are often so full of cream and less healthy. This tasty healthy broccoli and blue cheese soup recipe is still creamy tasting but low in calories and does not use cream.

Use reduced or yellow sticker vegetables where you can, you won’t taste any difference but it will save money.
If you use a soup maker remember to defrost any frozen vegetables first as it works much more smoothly that way.
Soup is a great snack on cold winter evenings and could be a good alternative to other comfort foods. If you always make a little extra and freeze some you could have a choice in the freezer every time you need a snack or a bit of warmth.
Soup is a great way to get extra vegetables into your diet. Why not add a mug of soup to a meal that doesn’t have vegetables in as an alternative to a side portion of vegetables for a change?
Why you need vegetables to lose weight
Everyone knows vegetables are good for you, don’t they? They are healthy and filling for very few calories!
The best vegetables are those with low-calorie density.
This means if you eat 100g of spinach, for example, it is just 23 calories and 100g of crisps, which would be just as filling, is around 536 calories!

Budget shopping tips
I try to ensure all of the recipes I make are accessible for everyone. By this, I mean that they do not use obscure hard to find ingredients. I also believe that recipes should use as few ingredients as possible and avoid expensive ingredients. We would all much rather spend money on holidays than expensive ingredients wouldn’t we?
Buying herbs and spices in bulk is something I really recommend. It can save a lot of money in the long term but also mean you never run out! I find putting them on Amazon subscribe and save helps too!
Additionally don’t forget to check out the yellow sticker reductions and freeze what you can.

Healthy snacks tips
There are so many tasty healthy snacks you can make if you are watching what you eat. It means you don’t have to get bored of one thing and can vary your diet considerably. This is one of my favourite savoury snacks in the winter!
Do you enjoy snacks when really you are not hungry and instead are boredom or comfort eating? I do this a lot so this is why it is so important to find low-calorie snacks when you can.
Broccoli and stilton soup for weight loss
If you follow Slimming World, Weight Watchers (WW), Noom or any other weight loss plan you can usually count the ingredients within this recipe in your allowances. It is of course important to check yourself any plan you follow and remember all nutritional information and ingredients are found in the recipe card below.
If you follow Slimming World the only ingredient you need to count is the stilton cheese. If you prefer a different blue cheese then it is easy to swap for whichever is your preference.

Description
Tasty broccoli and stilton soup which is healthy and if you follow Slimming world just 3 syns (approx) per portion.
Ingredients
650 Grams Broccoli (including stems)
350 Grams Potato (cubed)
1300 ml Vegetable Stock
2 tsp Dried Thyme
60 Grams Stilton (15g Per Person) 12 syns in total, 3 syns per portion approx.
Instructions
Roughly chop the broccoli including stalks and place in a large lidded pan with the cubed potatoes, Thyme, and stock.
Bring to the boil then put the lid on the pan and simmer for 15 minutes.
Blend until smooth, taking care if hot. I prefer to allow it to cool to blend it then heat it up when ready to serve.
Serve the hot soup into bowls and then crumble 15g of Stilton on top of each soup portion.
Notes
If you wish to make this syn free omit the stilton and it makes a tasty broccoli soup.
The stilton can easily be replaces by another blue cheese if you prefer.
