As we start to get cooler weather this hearty vegetable pasta soup is perfect to warm you up. It is quick and easy to make and a very budget-friendly meal too.
The pasta in the recipe makes it more filling than other soups yet it’s still low-calorie if you don’t add the optional parmesan.

Why this is a perfect low-calorie filling soup
This soup is perfect on low-calorie diets, full of fibre and filling whilst also being really easy to make. You don’t need any special equipment to make it and it will look just as good as the picture.
The recipe uses lots of vegetables which are great for weight loss.
Taking this to work in a flask could be the easiest lunch of the week whilst also helping you with your weight loss.
No more packaged sandwiches or flapjack bought from the canteen as you were still hungry!

Topping the soup with parmesan
This soup can easily be topped with a little parmesan to add to the Italian flavours it has. It is very much optional and you will still love it without the parmesan but it gives you something to consider.

How easy is this hearty vegetable pasta soup to make?
If you can cut up a few vegetables then this soup will be a dream. There are no fancy ingredients involved and no equipment you don’t already own. It’s made in around 15 minutes so it is quick too.
If you are not keen on one of the ingredients why not adapt it slightly? This recipe would be nice with celery, aubergine, peas and beans, I imagine too if you have any that need using up.
If you prefer a smoother soup then you could blend some of the ingredients down a little before adding the pasta if you choose.

A lunch for work if you have no microwave
Do you work in the community or don’t have access to a microwave? This can easily be warmed at home and put in a flask to keep warm until you need it.

Making the best amazing soups quickly
You do not need a soup maker to make soup, though it does make it a little easier. I have a great soup maker.
If you like a smooth soup all you need is a stick blender, the cheap ones work just fine. You’ll also need a ladle and a flask if you want to take it to work.

Tips for making this soup even easier
If you want to cut down the time even more you could use fresh or frozen ready-chopped onions or carrots.
If you use frozen this may reduce chopping time but will increase the frying time so it is up to you.
This soup freezes well so is perfect to make in bulk and defrost before reheating for a quicker meal.

Description
Delicious hearty vegetable pasta soup which is perfect for weight loss
Ingredients
2 cups of pasta shapes of your choice
low-calorie cooking spray
2 medium onions diced
2 whole garlic cloves finely chopped
1 tsp paprika
2 tbsp tomato paste or 1 cup of passata
2 medium carrots diced
1 cup of peas
2 medium courgettes diced
1400ml hot vegetable stock
1 tsp mixed dried herbs
Pinch of salt and pepper
1 tbsp chopped parsley, for serving
1 tbsp shaved Parmesan cheese, for serving (optional)
Instructions
Heat a few sprays of low-calorie cooking spray in a large saucepan on medium heat.
Add chopped onion and garlic and cook for about 2-3 min, until translucent.
Add tomato paste and paprika then cook until softened or a sauce-like consistency is formed, about 3-4 min.
Now add peas, carrot, and courgette and stir-fry for about a minute until they start to soften.
Add the vegetable stock and bring mixture to boil.
Add the pasta and season with salt, pepper and herbs and mix well.
Cover the pot and cook for about 6 min or depending on the instructions given on the pasta.
Once done remove the pot from the heat.
Garnish with freshly chopped parsley and shredded parmesan if required and serve warm.
