I recently made this sweetcorn fritter recipe and when I posted it on my Instagram (@justaveragejen) a few people asked me for the recipe and it was very popular. It is perfect for lunches and can be made a few days in advance.
This recipe as a healthy lunch
If you are eating healthily then you may have difficulty finding lunches for work. This is just one of many amazing Slimming World lunch ideas I have found so do check out my other recipes for more ideas.
If you take lunch then you are so much less likely to buy food which inevitably will be less healthy. Taking a variety of food throughout the week to work keeps your lunchtimes interesting and stops you from getting bored.
Even if, like me, you work alone at home it can make such a difference having your food already prepared for you. Why not give it a go and make sure you build a variety of lunches into your weekly meal plan like Sweetcorn Fritter.

There are so many tasty healthier snacks you can make if you are trying to lose weight. It means you don’t have to get bored of one thing and can vary your diet considerably. This is one of my favourites though and you will want to eat more and more of it I am sure!
Do you enjoy snacks when really you are not hungry and instead are boredom or comfort eating? I do this a lot so this is why it is so important to find low-calorie snacks when you can.
Budget shopping tips
I try to ensure all of the recipes I make are accessible for everyone. By this, I mean that they do not use obscure hard to find ingredients. I also believe that recipes should use as few ingredients as possible and avoid expensive ingredients. We would all much rather spend money on holidays than expensive ingredients wouldn’t we?
Buying herbs and spices in bulk is something I really recommend. It can save a lot of money in the long term but also mean you never run out! I find putting them on Amazon subscribe and save helps too! Additionally don’t forget to check out the yellow sticker reductions and freeze what you can.

Description
This sweetcorn fritter is so tasty and perfect for a snack or main meal. It is really easy to make and delicious warm or cold.
Ingredients
7 large Eggs
400 grams Sweetcorn Kernels (Canned and drained)
8 Spring Onions (finely Sliced)
1 Green Pepper (deseeded and diced)
1 Red Pepper (deseeded and diced)
400 grams Tomatoes (diced)
1 Red Chilli (deseeded and finely diced)
2 tbsp Tomato Puree
2 tbsp Lime Juice
Rocket To serve
Instructions
In a mixing bowl mix together the red pepper, tomatoes, chilli, 4 sliced spring onions, tomato puree and lime juice.
Preheat grill to high
Beat the eggs in a large mixing bowl and stir in the sweetcorn kernals, 4 spring onions, and the green pepper and season well.
Spray a large non stick frying pan with low calorie cooking spray and place over a medium heat.
Pour in the egg mixture and cook for 6-7 minutes until it is starting to set on the top.
Move the frying pan to under the grill (be careful if it has a plastic handle!) and finish cooking for another approx. 5 minutes or until the top is cooked and slightly golden.
Slice into 8 pieces and serve as 2 pieces a portion. It is nice hot or cold however if boxing with the rocket for a lunch allow to cool first!
It is lovely warm served with a big dollop of salsa and some extra salad and homemade chips. Alternatively as a quick lunch it is great cool with rocket and salsa.
