Have you ever sorted your freezer out and realised you seem to stockpile frozen peas? If that is the case then firstly, you are like me! Secondly, this is a great recipe for you.

Pea and coconut soup

Making this soup on a budget

This soup is so cheap as well as being quick and easy to make. If you do not have any fresh herbs at home then simply swap them for a teaspoon of each dried herb and you’ll get the same flavour.

Any peas can be used there is no reason you should buy the most expensive brand. Simply buy the value ones and you will still love this soup.

Coconut milk can sometimes be bought cheaply in the world foods section of the supermarket so do check that area too. I love buying things like tinned tomatoes from there and large bags of rice or pasta.

How to make this pea and coconut soup healthily

Using the lowest calorie coconut milk is the best way to reduce calories in this recipe. It does not alter the flavour but means you can save calories for a delicious dessert. I highly recommend this vanilla cheesecake!

If you follow Slimming World, Weight Watchers (WW), Noom or any other weight loss plan this is a great recipe to try. It is of course important to check yourself any plan you follow and remember all nutritional information and ingredients are found in the recipe card below.

Why you need vegetables to lose weight

Everyone knows vegetables are good for you, don’t they? They are healthy and filling for very few calories!

The best vegetables are those with low-calorie density. Basically, we are talking about healthier vegetables – potatoes don’t count but butternut squash is much healthier for example!

This means if you eat 100g of spinach, for example, it is just 23 calories and obviously, 100g of anything would fill you up significantly. On the other hand, 100g of crisps, which would be just as filling, is around 536 calories!

This pea and coconut soup is a perfect quick lunch that fits perfectly within most diets and weight loss plans.

If you like peas why not try my spinach and pea frittata or mushy pea curry as family meals this week?

Do you grow your own food? I would love to but the fact I struggle to keep herbs on the windowsill alive for long makes me wonder if it would be a good idea!

  1. Love peas and love coconut, but I’d never thought about combining them. Genius! Loved this soup.
