My Favourite No-Cook Meal
When I was losing weight, there were plenty of evenings when I simply couldn’t face cooking. Years ago, I probably would have ordered a takeaway because it felt easier.
Instead, I’d often throw together a huge salad with chicken or Quorn, cottage cheese and whatever vegetables were in the fridge. It wasn’t particularly exciting, but it was filling, took less than five minutes and meant I stayed on track without feeling deprived.
